You know those mini pizza’s from Trader Joe’s? The ones that are about the side of a coaster? I wonder what would happen if I cracked an egg on top before putting it in the oven. I’m guessing magic. (Because lord knows I’m not making pizza from scratch after a night of gin & tonics.)

I feel like Julia Roberts because my favorite mode of eggs is constantly changing. Growing up, I only liked scramble eggs; then I went through a poached egg phase (mostly because of the Eggs Benedicts in the Palladium cafeteria); now I eat a fried egg on toast most mornings; but I think baked eggs might be taking the top spot. Especially baked eggs cradled in a roll, pita, or baked potato. The only problem is that preheating the oven is way too much work for a weekday morning, so I can only enjoy baked eggs on lazy Saturdays and Sundays.
